Gluten Free Breakfast Bar

These bars are so so good!

While I typically subscribe to a modified paleo style way of eating, I do incorporate gluten free oats into my diet on occasion…90% of the time in the form of these breakfast bars.

I’ve adapted this recipe from a Pinterest recipe I found, so I did not completely come up with this idea myself but I have reduced the sugar and swapped out a few of the ingredients to make them more “skincare friendly”.

Oats are a wonderful prebiotic and soluble fibre source that can be great for your gut microbiome health. The nut butter provides a healthy source of protein and fat to help balance out the macronutrient structure of the bar (important for blood glucose regulation…which as you know from following along with me is vital for great skin). The hemp heart and flax seeds provide omega 3’s that are great for reducing inflammation and supporting the lipid matrix of your skin.

All in all, these bars are a quick and easy option to break your fast in the day or to snack on.

Ingredients:

  • 2 ripe bananas

  • 1/2 cup all-natural peanut OR almond butter, melted

  • 4 cups GF oats

  • 1/4 cup hemp hearts

  • 1/4 cup flax seeds

Mix all ingredients together until incorporated. Put into fridge for 15 minutes. Remove from fridge and press mixture into a 9x13in pan and bake at 350F for 15 minutes.

This recipe makes 12 squares for a total of 6 servings. Can be kept in the fridge for up to a week or frozen.
